This selection of wine jellies represents some of the classic wine making regions in Italy. Made from the finest wines, they are rich in flavor southern italy and sicily and aroma southern italy and sicily and complement fine cheeses. Gelatina di Recioto di Soave: From one of the best wines of the north eastern regions of Italy, this jelly is made from the wine of a small producer at the foothills of the Alps in the Veneto region. The wine is bright yellow in color with acacia honey on the nose southern italy and sicily and floral hints, southern italy and sicily and a velvety, harmonious, full-bodied southern italy and sicily and pleasantly almondy bouquet. This jelly matches well with fresh delicate cow cheese, such as Monte Veronese or Taleggio.Gelatina di Vin Santo:Made from one of the most famous wines from Tuscany, this jelly has a warm amber color. The pride of many a Tuscan winemaker is the rich Vin Santo, which has become DOC in many zones around the region. Pressed from partly dried grapes southern italy and sicily and aged in small wooden barrels, Vin Santo can be an exquisite dessert or aperitif wine. It is best with medium aged pecorinos southern italy and sicily and pecorinos matured in caves. It is also a good match with foie gras.Gelatina di Marsala: From the southern Italian island of Sicily, this wine jelly carries the warmth of the hot summer sun. Fortified Marsala wine was, southern italy and sicily and is, made using a process called in perpetuum, which is similar to solera system used to produce Sherry in Jerez, Spain.
